IN A SHAKER TIN, COMBINE BOURBON, LEMON JUICE, MAPLE SYRUP, AND EGG WHITE*. CLOSE TIN AND SHAKE WELL UNTIL FROTHY. OPEN AND ADD ICE, SHAKE AGAIN UNTIL CHILLED. DOUBLE STRAIN OVER LARGE ICE CUBE INTO A SINGLE ROCKS GLASS. GARNISH WITH GRATED CINNAMON AND A LEMON SWATH.
